Pot Roast Potatoes and Carrots 

INGREDIENTS  

2 lbs potatoes, UNpeeled and quartered (*any variety, but I prefer yellow) 

2 stalks celery, sliced 

1 small onion, chopped 

8 oz. Baby Carrots 

3 cups vegetable broth 

2 tsp Orrington Farms Vegan Beef Flavored Broth & Seasoning (optional, but recommended!!) 

DIRECTIONS  

Preheat oven to 350F.  

Place everything in a large covered casserole dish and bake covered for about an hour. Remove cover.  

Bake an additional 45 min. to an hour. 

***These really are better the longer they cook. You can also use a slow cooker!
